And while we’re always ready for a cocktail, we know that sometimes the finest drinks are the ones without any alcohol. We’ve just launched our first mocktail menu, a selection of delicious, cocktail-aficionado-approved drinks that won’t leave you with a hangover. And one of our favorite additions to the menu is Sol, a new spin on the Piña Colada with the boost of matcha. “Matcha adds a simple but exciting twist to the great classic drink,” says Kevin Xie, lead bartender at St. Cloud. “The unique green tea profile pairs extremely well with the creaminess of the coconut. Despite being a mocktail, this drink has already become one our most requested items.” Here, Xie shares how to make his new take on the piña colada mocktail.
How to Make a Matcha Piña Colada Mocktail
Matcha Coconut Cream
1 tsp matcha powder mixed into 16 oz coconut cream
3 oz pineapple juice
1 oz matcha coconut cream
mint for garnish
Pour pineapple juice and matcha coconut cream in mixer
Pour over fresh ice in rocks glass
Garnish with mint
*Optional: This piña colada mocktail works equally well as a cocktail. Xie recommends adding 1 oz white rum and 1 oz coconut rum.
