Inspired by the rich history of The Knickerbocker, a 1906 landmarked New York City treasure recently reopened as Times Square’s premier luxury lifestyle hotel, Chef Palmer adds new twists to his acclaimed cuisine to create the Hotel’s signature Honest American Cuisine in an open action kitchen. An elegant use of glass, marble and lighting plays off sheer chain-metal drapes to create semi-private spaces throughout the room, enhancing an understated ‘see-and-be-seen’ vibe.

What is Raclette?.
Raclette is a delicious semi-hard cow’s milk cheese best enjoyed in a relaxed and convivial setting. A dish indigenous to the snowy Swiss Alps, the cheese round may be gently heated and scraped onto a plate by hand or sliced and melted over a tabletop grill with small pans, known as coupelles. The savory fondue-like cheese is served alongside a variety of accouterments including cured meats, cornichons, and a selection of vegetables and sauces.
Traditionally, it is followed by a shot of Schnapps, making it the perfect way to warm up on the coldest winter days.
